- 200 g (1 cup) light brown sugar, packed
- 200 g (1 cup) granulated sugar
- 1 tbsp vanilla extract
- 4 large eggs, at room temperature

- 120 g (1 cup) walnuts, chopped, divided

Method
Restated from the original video
- 1
Heat the oven to 175 °C (350 °F). Grease two 23 cm (9 in) round cake pans and line the bases with baking paper.
- 2
Whisk the flour with the cinnamon, ginger, nutmeg, baking soda, baking powder and salt in a bowl.
- 3
In a larger bowl, whisk the oil with the brown sugar, granulated sugar and 1 tbsp vanilla until smooth.
- 4
Beat in the eggs one by one, mixing well after each.
- 5
Stir the dry mixture into the wet one just until no streaks of flour remain.
- 6
Fold in the carrots and three quarters of the walnuts.
- 7
Divide the batter between the pans and bake until a skewer pushed into the middle comes out clean, 35-45 min.
- 8
Cool the layers in their pans for 30 min, then turn them out onto a rack, peel off the paper and let them cool completely.
- 9
For the frosting, beat the cream cheese with the butter until smooth and creamy, 2-3 min.
- 10
Beat in the powdered sugar and the remaining vanilla until thick and spreadable. Avoid overbeating, which makes it runny.
- 11
Set one layer on a plate, spread with about a third of the frosting and top with the second layer.
- 12
Cover the top and sides with the rest of the frosting and scatter the remaining walnuts over the top.
- 13
Chill for 30 min to set the frosting before slicing. Keep leftovers in the fridge.
