Method

Restated from the original video

  1. 1

Heat the oven to 175 °C (350 °F). Grease a 20 cm (8 in) square pan and line it with baking paper, leaving some hanging over two sides.

  2. 2

For the streusel, mix 100 g flour with the brown sugar, cinnamon and 1/4 tsp salt. Rub in the cold butter with your fingertips until it forms damp crumbs that hold together when pinched. Set aside.

  3. 3

In another bowl, whisk 240 g flour with the baking powder, baking soda and 1/2 tsp salt.

  4. 4

Beat the soft butter and granulated sugar with an electric mixer until pale and fluffy, 2-3 min.

  5. 5

Beat in the eggs one at a time, then the vanilla.

  6. 6

On low speed, add half the flour mixture, then the sour cream, then the rest of the flour. Stop as soon as no dry streaks remain. The batter will be thick.

  7. 7

Spread half the batter in the pan and scatter a little more than half the streusel over it.

  8. 8

Drop the rest of the batter on top in spoonfuls and gently spread it to the edges with an offset spatula. Cover with the remaining streusel.

  9. 9

Bake until a skewer in the centre comes out clean and the top no longer wobbles, 45-55 min.

  10. 10

Cool in the pan for 15 min, then lift out with the paper and cool a little longer on a rack before cutting into 9 squares.
