7 ingredients
6 steps
What you need
- 200 g (2 cups) walnuts, shelled, halves
- 4 cloves garlic, peeled
- 2 tsp ground coriander
- 1 tsp ground red pepper, or to taste
- 1 tsp salt
- 20 ml (4 tsp) wine vinegar, grape or white wine vinegar
- 100 ml (scant 1/2 cup) water, cold
Method
Restated from the original video
- 1
Put the walnuts and garlic in a food processor and grind to a fine, oily paste.
- 2
Add the ground coriander, ground red pepper and salt, and mix well.
- 3
With the machine running, pour in the water in a thin stream, then the wine vinegar.
- 4
Stop when the sauce is smooth and spoonable, like thick cream. Add a little more water if it is stiff.
- 5
Taste and adjust the salt, vinegar and red pepper.
- 6
Rest the sauce for 30 min before serving so the garlic mellows and the sauce thickens. Serve at room temperature.
