Georgian Walnut and Honey Brittle Diamonds
4 ingredients
10 steps
What you need
- 300 g (3 cups) walnuts, halves or large pieces
- 250 g (3/4 cup) honey, a dark, strongly flavored one is best
- 50 g (1/4 cup) granulated sugar
- 1 tbsp sunflower oil, for greasing
Method
Restated from the original video
- 1
Heat the oven to 180 °C (350 °F).
- 2
Spread the walnuts on a baking sheet and toast until fragrant and a shade darker, 8-10 min.
- 3
Chop the warm walnuts coarsely into pieces about 1 cm (1/2 in) across. Keep them warm.
- 4
Line a second baking sheet with parchment paper. Brush the paper and a rolling pin lightly with oil.
- 5
Combine the honey and sugar in a heavy, wide saucepan. Heat over medium-low, stirring only until the sugar dissolves.
- 6
Boil gently, without stirring, until the honey mixture is thick and deep amber, 8-10 min. A drop in a glass of cold water should set into a firm bead. Watch closely, since honey scorches fast.
- 7
Take the pan off the heat and stir in the walnuts for 30 seconds, until fully coated.
- 8
Scrape the mixture onto the parchment. Cover with the oiled rolling pin and roll to an even layer about 1 cm (1/2 in) thick.
- 9
Cut into diamonds about 4 cm (1 1/2 in) wide with an oiled knife while still warm, within 2-3 min.
- 10
Cool for 30 min, until hard. Break apart along the cuts and store airtight for up to 2 weeks.
