3 ingredients
7 steps
What you need
- 120 ml (1/2 cup) water, cold, measured with the demitasse cups
- 2 tsp Greek coffee, finely ground, heaped
- 2 tsp sugar, for medium sweet; use 0-1 tsp for less
Method
Restated from the original video
- 1
Measure 60 ml of cold water per demitasse cup into a briki or small saucepan.
- 2
Tip in the ground coffee and the sugar, then stir off the heat until no lumps remain.
- 3
Set the briki over low-medium heat and do not stir again. It takes 3-4 min.
- 4
When the foam starts to rise, lift the briki off the heat for a few seconds, then return it.
- 5
As soon as the foam rises to the rim again, remove the briki from the heat.
- 6
Spoon the foam into the cups, then pour in the coffee slowly.
- 7
Let the coffee stand for 2-3 min so the grounds settle. Serve with a small glass of cold water and do not drink the grounds at the bottom.
