13 steps

What you need

  • 320 g (2 1/2 cups) all-purpose flour, plus extra for dusting
  • 4 large eggs, at room temperature
  • 2 tbsp sugar
  • 30 g (2 tbsp) unsalted butter, softened
  • 1 orange, zest only, finely grated
  • 1 tbsp limoncello or anise liqueur
  • salt, a pinch, to taste
  • 1 l (1 quart) vegetable oil, for frying
  • 350 g (1 cup) honey
  • 50 g (1/3 cup) candied orange peel, finely diced
  • 2 tbsp coloured sprinkles, for decorating

Method

Restated from the original video

  1. 1

Heap the flour on a work surface or in a large bowl and make a well in the middle.

  2. 2

Add the eggs, sugar, butter, orange zest, liqueur and salt to the well and beat them together with a fork.

  3. 3

Draw the flour in bit by bit until a shaggy dough forms, then knead until smooth and soft, 5-8 min. Dust with a little more flour only if it sticks.

  4. 4

Wrap the dough and let it rest at room temperature for 30 min.

  5. 5

Cut off a small piece of dough and roll it under your palms into a rope about 1 cm (1/2 in) thick. Keep the rest covered.

  6. 6

Slice the rope into 1 cm (1/2 in) lengths and roll each into a little ball. Spread them on a floured tray and repeat with the remaining dough.

  7. 7

Heat the oil in a deep heavy pot to 175 °C (350 °F).

  8. 8

Shake excess flour off a handful of balls and fry them, stirring so they colour evenly, until puffed and golden, 2-3 min.

  9. 9

Lift them out with a slotted spoon onto paper towels. Fry the rest in batches, letting the oil come back to temperature each time.

  10. 10

Warm the honey in a wide pan over low heat until it turns runny, 2-3 min. Take it off the heat.

  11. 11

Tip in the fried balls and half the candied peel and fold gently until every ball is glazed.

  12. 12

Pile onto a platter in a mound or a ring, using wet hands to shape it.

  13. 13

Scatter the remaining candied peel and the sprinkles over the top. Leave for 30 min so the honey sets a little before serving.
