11 steps

What you need

  • 250 g (1 1/4 cups) wheat berries
  • 1 pinch salt
  • 150 g (1 cup) poppy seeds
  • 2 tbsp sugar
  • 100 g (1 cup) walnuts
  • 80 g (1/2 cup) raisins
  • 120 g (1/3 cup) honey, plus more to taste

Method

Restated from the original video

  1. 1

Rinse the wheat berries until the water runs clear. Cover with plenty of cold water and soak overnight.

  2. 2

Drain, put the wheat in a heavy pot with 1.5 l (6 cups) fresh water and the salt, and bring to a boil.

  3. 3

Simmer gently, partly covered, until the grains are soft and starting to split, 1 1/2-2 1/2 hours. Top up with hot water if the pot runs dry. Drain and cool.

  4. 4

Meanwhile, rinse the poppy seeds in a fine sieve, put them in a bowl and pour over boiling water to cover. Leave for 1 hour, then drain well.

  5. 5

Grind the poppy with the sugar in a blender, spice grinder or meat grinder until it turns pale grey and gives off a milky liquid.

  6. 6

Toast the walnuts in a dry pan over medium heat until fragrant, 4-5 min, then chop them.

  7. 7

Cover the raisins with hot water for 10 min, then drain.

  8. 8

Stir the honey into 100 ml (scant 1/2 cup) warm boiled water until dissolved.

  9. 9

Mix the cooled wheat with the poppy, walnuts and raisins in a large bowl.

  10. 10

Pour in the honey water and stir. The kutia should be moist and loose; add a little more water or honey if it seems dry or not sweet enough.

  11. 11

Cover and chill for at least 1 hour so the flavours blend. Serve cold or at room temperature.

About kutia

Kutia is boiled wheat berries mixed with poppy seeds, honey, walnuts, and raisins into a sweet, chewy grain dish eaten in small portions rather than as a full dessert.

What cooks argue about

Cooks disagree on the poppy seeds: grinding or pounding them into a paste to release their oil and flavor, versus leaving them whole, which some find leaves the dish tasting flat.
