7 steps
What you need
- 400 g (14 oz) suluguni cheese, or a firm low-moisture mozzarella
- 3 tbsp all-purpose flour
- 40 g (3 tbsp) butter
- fresh coriander or basil, chopped, for serving
- tkemali or other sour plum sauce, optional, for serving
Method
Restated from the original video
- 1
Cut the suluguni into slices about 1 cm (1/2 in) thick and pat them dry with paper towels.
- 2
Spread the flour on a plate and turn each slice in it until coated on all sides. Shake off the excess.
- 3
Melt the butter in a heavy frying pan or a clay ketsi over medium heat until it foams.
- 4
Lay the slices in the pan in one layer without crowding.
- 5
Fry until the underside is golden and crisp, 1-2 min.
- 6
Turn carefully with a thin spatula and fry the second side until golden and the cheese softens and starts to spread at the edges, 1-2 min more.
- 7
Slide the cheese onto a warm plate, scatter over the coriander and serve at once with the tkemali, while it is still stretchy.
