Aperol Spritz, Venetian 3-2-1 Build, illustrated

What you need

  • 90 ml (3 oz) prosecco, dry, well chilled
  • 60 ml (2 oz) Aperol, chilled
  • 30 ml (1 oz) soda water, chilled
  • 1 slice orange
  • ice cubes, for serving

Method

Restated from the original video

  1. 1

Fill a large stemmed glass about two thirds full of ice.

  2. 2

Add the prosecco first so the bitter liqueur does not sink to the bottom.

  3. 3

Add the Aperol, then top with a splash of soda.

  4. 4

Give one slow stir with a bar spoon to mix without knocking out the bubbles.

  5. 5

Tuck the orange slice into the glass and serve right away.

About aperol spritz

A bright orange drink of Aperol, prosecco, and a splash of club soda over ice, served in a wine glass with an orange slice. It's low in alcohol and bitter-sweet rather than strong.

What cooks argue about

The ratio is the whole argument: three parts prosecco to two parts Aperol to one part soda is standard, though many bars pour it sweeter or heavier on soda. Ice quantity changes dilution too.
