Method

Restated from the original video

  1. 1

Mix 3 tbsp fish sauce, the honey, 1 tbsp sugar, half the garlic, the shallots, lemongrass, black pepper and 1 tbsp oil in a dish.

  2. 2

Turn the pork chops in the marinade, cover and chill for at least 1 hour.

  3. 3

Put the broken rice in a pot with 360 ml (1 1/2 cups) water and a pinch of salt. Cook covered on low heat until tender, about 20 min, then leave covered.

  4. 4

Stir the vinegar, 2 tbsp sugar and salt with 200 ml (3/4 cup) water until dissolved. Add the carrot and daikon and leave for at least 15 min.

  5. 5

Heat 2 tbsp oil in a small pan, add the scallions and stir until just wilted, 1 min. Set aside.

  6. 6

Stir the remaining fish sauce and sugar with 150 ml (2/3 cup) warm water, the lime juice, the remaining garlic and the chili.

  7. 7

Heat a grill pan or barbecue to medium-high and brush with a little oil.

  8. 8

Grill the pork chops until charred underneath, 4-5 min. Brush the raw tops with the leftover marinade, then turn them over.

  9. 9

Grill the second side until charred and 63 °C (145 °F) inside, 4-5 min.

  10. 10

Rest the pork chops for 3 min, then slice them into strips.

  11. 11

Fry the eggs sunny side up in the remaining oil.

  12. 12

Fluff the broken rice and pile it onto plates with the pork, an egg, the cucumber, tomatoes and drained pickles.

  13. 13

Spoon the scallion oil over the rice and serve the dipping sauce on the side to pour over.

About com tam

Grilled pork chop served over broken rice grains with a fried egg, pickled vegetables, and fish sauce, a dish built around rice once considered a byproduct.

What cooks argue about

Cooks argue over the grain itself: true broken rice cooks up drier and more separate, while some restaurants now use whole rice cooked to look broken, which changes the texture.
