Method
Restated from the original video
- 1
Put the pork bones in a large pot, cover with cold water and bring to a boil. Boil 5 min, then drain, rinse the bones and wash the pot.
- 2
Return the bones to the pot with 3 l (3 qt) of fresh water. Add the daikon, onion, dried shrimp, rock sugar and salt.
- 3
Bring to a boil, skim off the foam, then lower the heat so the surface barely bubbles.
- 4
Add the pork belly and simmer for 1 hour, until it is tender and cooked through. Lift it out and chill in a bowl of iced water for 5 min, then slice thinly.
- 5
Keep the broth simmering for another 30 min while you prepare the toppings.
- 6
Boil the quail eggs for 3 min, cool them in cold water, peel and halve.
- 7
Warm the oil in a skillet on medium. Fry the garlic and shallots until fragrant and golden, 2-3 min.
- 8
Add the ground pork, break it up and cook until no pink remains, 4-5 min. Season with a pinch of salt and set aside.
- 9
Strain the broth into a clean pot and discard the bones and vegetables. Season with the fish sauce and more salt to taste, then keep at a simmer.
- 10
Poach the prawns in the simmering broth until pink and curled, 1-2 min. Lift them out.
- 11
Cook the rice noodles in boiling water until tender, 3-4 min. Drain and rinse.
- 12
Divide the noodles among 4 bowls. Top with the sliced pork belly, ground pork, prawns, quail eggs and bean sprouts.
- 13
Ladle in the hot broth and scatter with the chives. Serve with the lime wedges.
