- neutral oil, for deep-frying
- 1 tbsp neutral oil, for the sauce
- 2 cloves garlic, minced
- 2 tsp fresh ginger, minced
- 240 ml (1 cup) orange juice, freshly squeezed
- 2 tsp orange zest, plus extra for serving
- 3 tbsp light soy sauce
- 70 g (1/3 cup) brown sugar, packed
- 2 tbsp rice vinegar

Method
Restated from the original video
- 1
Cut the chicken into 2.5 cm (1 in) pieces and season with the salt and pepper.
- 2
Beat the eggs in one bowl. In a shallow dish, mix the flour with the 60 g of cornstarch.
- 3
Pour oil into a heavy pot to a depth of 5 cm (2 in) and heat it to 175 °C (350 °F).
- 4
Dip each piece of chicken in egg, let the excess drip off, then roll it in the flour mix and shake off the loose coating.
- 5
Fry in batches of 8-10 pieces until deep golden and cooked through with no pink inside, 5-6 min. Drain on a rack.
- 6
While the chicken fries, warm the 1 tbsp of oil in a small pan set over medium heat and cook the garlic and ginger until fragrant, about 1 min.
- 7
Add the orange juice, zest, soy sauce, sugar, vinegar and chili flakes and bring to a simmer.
- 8
Stir the 1 tbsp of cornstarch into 2 tbsp of cold water, whisk it into the pan and cook, stirring, until the sauce turns thick and glossy, 1-2 min.
- 9
Take the sauce off the heat and stir in the sesame oil.
- 10
Tip the fried chicken into the pan and toss until every piece is coated. Do this just before serving so the crust stays crisp.
- 11
Scatter over the scallions, sesame seeds and a little more zest, and serve hot.
