11 steps

What you need

  • 300 g (1 1/2 cups) medium-grain white rice
  • 420 ml (1 3/4 cups) water, for the rice
  • 450 g (1 lb) ground beef, 80% lean
  • 1 yellow onion, half finely minced, half thinly sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil, divided
  • 30 g (2 tbsp) butter
  • 2 tbsp all-purpose flour
  • 375 ml (1 1/2 cups) beef stock
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 4 eggs
  • 2 green onions, sliced

Method

Restated from the original video

  1. 1

Rinse the rice until the water runs almost clear. Put it in a saucepan with the water, bring to a boil, then cover and cook on the lowest heat for 15 min. Rest off the heat, still covered, for 10 min.

  2. 2

Meanwhile, mix the beef with the minced half of the onion, the salt and the pepper. Shape into 4 patties about 2 cm (3/4 in) thick and press a shallow dip in the center of each.

  3. 3

Heat 1 tbsp oil in a large frying pan over medium-high heat. Brown the patties until cooked through, 4-5 min per side, or 71 °C (160 °F) inside. Move them to a plate and cover loosely.

  4. 4

Lower the heat to medium and add the butter and the sliced half of the onion to the same pan. Cook, scraping up the browned bits, until soft and golden, 6-8 min.

  5. 5

Sprinkle in the flour and stir for 1-2 min until it smells toasty and turns light brown.

  6. 6

Pour in the stock a little at a time, whisking so no lumps form.

  7. 7

Add the soy sauce and Worcestershire and simmer until the gravy coats a spoon, 4-5 min. Taste and adjust the seasoning.

  8. 8

Slide the patties back into the gravy for a minute to warm through.

  9. 9

In a second pan, heat the remaining oil over medium heat and fry the eggs sunny side up until the whites are set and the yolks still runny, 3-4 min.

  10. 10

Mound the rice on 4 plates, set a patty on each and spoon over plenty of gravy.

  11. 11

Top each with a fried egg, scatter with green onions and serve.
