Method

Restated from the original video

  1. 1

Season the pork and beef with the salt and pepper.

  2. 2

Set a very large skillet, wok or plow disc over medium-high heat. Add the bacon and cook, stirring, until crisp and brown, 6-8 min.

  3. 3

Add the pork and cook until browned and cooked through, 5-6 min. Move the bacon and pork to a bowl, leaving the fat behind.

  4. 4

Cook the beef in the same fat. It first gives off juices, so wait until they evaporate and the cubes brown, 5-6 min. Move to the bowl.

  5. 5

Brown the frankfurters for 3-4 min and add them to the bowl.

  6. 6

Add the chorizo and break it into small crumbles as it hits the pan. Cook until no pink remains and it is cooked through, 6-8 min. Move to the bowl.

  7. 7

In the fat left behind, soften the onion for 3 min. Add the peppers and garlic and cook for 2 min.

  8. 8

Stir in the serranos and tomatoes and cook until the tomatoes soften, 3-4 min.

  9. 9

Return all the meat to the pan and pour in the beer. Add half of the cilantro.

  10. 10

Cook, stirring, until the beer has evaporated and the sauce clings to the meat, 5-8 min. Taste and add salt if needed.

  11. 11

Scatter the remaining cilantro over the top.

  12. 12

Spoon the discada onto warm tortillas, top with salsa and squeeze lime over each.
