Sweet Punjabi Lassi with Cardamom

6 ingredients

5 steps

What you need

  • 500 g (2 cups) plain whole-milk yogurt, cold
  • 240 ml (1 cup) cold water, or cold whole milk
  • 4 tbsp sugar, or to taste
  • 8 green cardamom pods
  • 10 saffron strands, optional
  • 1 tbsp pistachios or almonds, chopped, optional

Method

Restated from the original video

  1. 1

Lightly crush the cardamom pods in a mortar, pick out the husks and grind the seeds to a fine powder.

  2. 2

Whisk the yogurt in a large bowl, or blitz it in a blender, until completely smooth.

  3. 3

Add the sugar and water and keep whisking until the sugar has dissolved and a layer of froth forms on top, 2-3 min.

  4. 4

Stir in most of the cardamom and the saffron. Taste and add more sugar if you like it sweeter, or a splash more water for a thinner drink.

  5. 5

Pour into tall glasses. Top with the nuts and a pinch of the remaining cardamom and serve straight away while cold.

About lassi

Yogurt blended with water or milk into a thick, drinkable consistency, sweetened with sugar or salted with cumin. Served cold, sometimes topped with a spoon of cream.

What cooks argue about

The clearest split is sweet versus salted lassi, a regional divide rather than a technical error. Cooks also argue over how much water to add before the drink thins too far.
