Baozi

Baozi are steamed buns of yeasted dough wrapped around a filling, here ground pork with scallion and ginger, pleated shut at the top and steamed until the dough turns soft and pillowy.

Where it comes from

Steamed buns spread widely across Chinese regional cooking, with fillings and dough sweetness varying by area, and the pleated top a mark of a cook's skill at sealing the filling inside.

What cooks argue about

Cooks disagree over the dough's rise: a fully proofed dough gives a very soft, airy bun, while an underproofed one stays denser, and how long to let it rise is judged mostly by feel.
