Where it comes from

The dish takes its name from the shoulder pole, or dan dan, that street vendors in Chengdu once used to carry noodles and sauce in two baskets for sale.

What cooks argue about

Cooks argue over a soupy noodle in broth, closer to the Sichuan original, versus a brothless noodle tossed with sauce pooled at the bottom, the more common restaurant style abroad.
