Stir-fried wheat noodles with bean sprouts, celery, carrot, and onion in soy sauce, served either soft and saucy or pan-fried crisp.
Where it comes from
Chow mein grew out of Cantonese immigrant cooking in 19th century America, where cooks stretched the dish with cheap vegetables for railroad and mining town customers who had limited access to seafood.
What cooks argue about
Cooks argue over noodles boiled and stir-fried soft versus parboiled and pan-fried into a crisp cake before the vegetables go on top.
