Where it comes from

The California roll was developed in Los Angeles in the 1970s, reportedly to appeal to American diners wary of raw fish and visible seaweed, by turning the rice outward and using cooked crab instead.

What cooks argue about

Cooks argue over real crab meat versus imitation, and over hiding the nori entirely inside the rice rather than leaving it exposed, since exposed nori turns chewy once refrigerated.
