Coconut Chutney

A ground paste of fresh coconut, roasted chana dal, green chili, and curry leaves, tempered with mustard seed in hot oil. Served alongside dosa or idli, mild and slightly nutty with a sharp bite from the chili.

Where it comes from

The condiment is native to South Indian coastal kitchens, particularly Tamil Nadu and Karnataka, where coconut palms made fresh coconut cheap and constant. Chana dal was ground in for body and a mellow, nutty background.

What cooks argue about

Cooks argue over fresh coconut, which grinds smoother and tastes cleaner, against desiccated coconut, which keeps longer but turns grainy. The tempering is stirred in or poured over the top.
