Vada Pav

A deep-fried potato fritter tucked into a soft bread roll with garlic and green chutney. Sold from street carts across Mumbai, eaten as a quick handheld meal.

Where it comes from

The snack grew out of Mumbai's working-class food stalls, built to feed mill and factory workers something filling and cheap between shifts. It spread from street carts into something sold at nearly every train station across the city.

What cooks argue about

Cooks argue over the chutney layering, since a dry garlic-chili chutney adds sharp heat while a wet green mint-coriander chutney adds freshness, and vendors use both but in different amounts.
