Pav Bhaji
A thick, mashed vegetable curry seasoned with garam masala, served with soft bread rolls toasted in butter. Eaten by scooping the bhaji up with the bread.
Where it comes from
The dish started as a fast lunch sold to Mumbai's textile mill workers, who needed something cheap and quick between shifts. Vendors mashed whatever vegetables were available into one pan rather than cooking separate dishes.
What cooks argue about
Cooks argue over how finely to mash the vegetables, since a smooth mash spreads easily on the bread while chunkier bhaji keeps more texture. The amount of butter used is a separate, heated fight.
