Paneer Butter Masala
Fresh cheese cubes simmered in a tomato gravy finished with butter, cream, and cashew paste, sweeter and milder than most curries. A vegetarian counterpart to butter chicken.
Where it comes from
The dish follows the same tomato-butter gravy developed for butter chicken, adapted with paneer to give vegetarian diners an equivalent restaurant dish. It became a fixture on Indian menus wherever butter chicken appears.
What cooks argue about
Cooks argue over cashew paste versus cream for the gravy's body, since cashews add more sweetness and thickness while cream keeps it lighter. How much sugar belongs in the sauce is a separate fight.
