Chicken Tikka Masala

Where it comes from
A popular but unconfirmed story credits a Glasgow restaurant cook in the 1970s with inventing the dish after a customer complained that dry chicken tikka needed gravy, so a tinned tomato soup and cream sauce was added on the spot. No document settles whether this happened as told.

Cooks disagree on how much this dish should differ from butter chicken, since the split often comes down to yogurt marinade tang carrying through versus a smoother, sweeter cream base.
