Palak Paneer
Cubes of fresh cheese in a pureed spinach gravy seasoned with onion, tomato, and garam masala. Mild, earthy, and green, usually eaten with rice or roti.
Where it comes from
The dish reflects North Indian home cooking's reliance on paneer as a protein that doesn't need refrigeration for long and spinach as a cheap, plentiful vegetable. It became a common vegetarian restaurant order well beyond its home-kitchen roots.
What cooks argue about
Cooks argue over how long to cook the spinach: a brief blanch keeps the color bright green, while longer cooking dulls it toward olive but deepens flavor.
Nobody has published a palak paneer recipe yet. The page stays out of search until one exists, which is the rule for every thin page here.
