Moroccan Mint Tea
Moroccan mint tea is gunpowder green tea steeped with a large bunch of fresh mint and a heavy amount of sugar, then poured from height to raise a foam on top.
Where it comes from
The tea reflects Morocco's trade history, since Chinese gunpowder tea reached North Africa through European merchants and merged with local mint and a taste for very sweet drinks already common in the region.
What cooks argue about
The debated point is sugar quantity: tradition sweetens heavily, while many cooks now cut it back sharply. The other argument is pouring height, meant to aerate the tea and build foam.
