Panna Cotta

Sweetened cream set with gelatin into a soft, wobbly custard, unmolded and served plain or with a fruit or caramel sauce. It should hold its shape but barely, trembling when the plate moves.

Where it comes from

The dessert comes from Piedmont in northern Italy, a region with a strong dairy tradition, though no confirmed date or person marks its invention despite various claimed origin stories. It stayed a home dessert before restaurants popularized it in the late 20th century.

What cooks argue about

Gelatin amount is the entire argument: too much and the texture turns rubbery, too little and it won't unmold cleanly and collapses on the plate. Cooks disagree on the exact ratio needed.
