Roasted Potatoes

Potato chunks tossed in olive oil with garlic and rosemary, roasted until the outside turns crisp and golden and the inside stays soft.

Where it comes from

Roasting became the standard side for a Sunday roast because it uses the same hot oven already cooking the meat, with no extra burner or pan required.

What cooks argue about

The argument is over parboiling the potatoes before roasting, which roughs up the surface for a crisper crust, against roasting them raw, which is faster but yields a softer exterior.

Nobody has published a roasted potatoes recipe yet. The page stays out of search until one exists, which is the rule for every thin page here.
