A whole russet potato baked until the skin turns crisp and the inside goes fluffy, split open and loaded with butter, sour cream, and chives.
Where it comes from
Home ovens and cheap starchy potatoes made this a filling, low-cost side long before restaurants turned it into a steakhouse item with a full toppings bar.
What cooks argue about
Cooks argue over wrapping the potato in foil, which steams the skin soft, against baking it bare on a rack, which keeps the skin crisp but takes longer.
