Fried Egg
An egg cracked into a hot pan with butter or oil, cooked until the white sets and the yolk stays as runny or firm as you choose.
Where it comes from
It needs only a hot pan and a few minutes, which made it the default way to add protein to a plate without much technique or cleanup.
What cooks argue about
Cooks argue over basting the egg with hot fat to set the top without flipping, or flipping it hard, which cooks the white through but risks breaking the yolk.
