Where it comes from
Diners built this around the English muffin because it toasts fast and holds together, and fast food chains later standardized it into a breakfast-hours order.
What cooks argue about
The argument is over the egg: folded or basted so it stays soft inside the sandwich, or hard-cooked into a firm round that will not run when you bite in.
