Where it comes from
Roasting a whole bird stretched one animal into several meals, and it became a marker of a proper Sunday dinner in households that could afford to cook a whole chicken at once.
What cooks argue about
Cooks argue over roasting the bird breast-side up, which browns evenly but risks the breast drying before the thighs finish, or spatchcocking it flat, which cooks more evenly but loses the whole-bird presentation.
