Sharlotka

Sharlotka is a simple batter of egg, sugar, and flour poured over sliced apples and baked, closer to a sponge cake studded with fruit than a traditional layered apple cake.

Where it comes from

It grew out of Russian home baking as an easy way to use a batch of apples with a minimal, pantry-only batter, no butter or creaming required, just whisked eggs and sugar.

What cooks argue about

Cooks argue over whether to whip the eggs to full volume for a lighter, airier cake, or mix them briefly, which gives a denser, more custardy texture around the apples.
