Steak Frites
A grilled or pan-seared steak served simply with a pile of crisp fried potatoes, seasoned with little more than salt and pepper.
Where it comes from
The pairing became a fixture of French bistro menus in the twentieth century, prized for being fast to cook and cheap to run on a set menu, needing only a good cut of beef and potatoes already on hand.
What cooks argue about
The core disagreement is doneness and cut: bistro tradition favors a thin cut cooked to rare or medium rare, while diners elsewhere ask for cuts and temperatures the classic version was never built around.
