Takoyaki

Batter poured into a molded pan with chunks of octopus, cooked into round balls crisp outside and molten in the center, then topped with sauce, mayonnaise, and dried bonito flakes that curl in the heat.

Where it comes from

The snack developed in Osaka in the 1930s, adapting an earlier batter-ball snack by swapping in octopus, which was cheap and plentiful along the coast at the time. It became a fixture of Osaka street food specifically.

What cooks argue about

The technical fight is the flip: turning each ball early and often builds a round shape but risks spilling the center, while flipping late gives a firmer ball, easier to handle but less molten inside.
