Homemade Limoncello from Lemon Peel Steeped in Vodka
4 ingredients
9 steps
What you need
- 8 unwaxed lemons, scrubbed and dried; thick-skinned, fragrant ones are best
- 750 ml (one 25 oz bottle) vodka, 40% alcohol
- 300 g (1 1/2 cups) granulated sugar
- 300 ml (1 1/4 cups) water
Method
Restated from the original video
- 1
Scrub the lemons under warm water to remove any wax, then dry them well.
- 2
Peel off the yellow zest in long strips with a vegetable peeler. Take as little of the white pith as you can, because it makes the liqueur bitter.
- 3
Put the zest in a large clean jar and pour in the vodka. Seal the jar.
- 4
Store it in a cool, dark place for 10 days, giving the jar a shake every day or two. The vodka turns a deep yellow.
- 5
Bring the sugar and water to a simmer in a small pan, stirring until the sugar dissolves, 3-5 min. Let the mixture cool completely.
- 6
Strain the vodka through a fine sieve into a bowl and discard the zest. For a clearer drink, strain again through a paper filter.
- 7
Stir in the cooled sugar water. Pour the limoncello into clean bottles and seal them.
- 8
Leave the bottles to rest for at least 1 week, in the fridge or freezer. The flavors blend and the liqueur softens.
- 9
Serve ice cold in small glasses, straight from the freezer.
