8 ingredients
16 steps
What you need
- 250 ml (1 cup) whole milk
- 5 large egg yolks
- 120 g (1/2 cup + 1 tbsp) granulated sugar
- 1 tsp vanilla extract
- 450 ml (1 3/4 cups + 2 tbsp) heavy cream, cold
- 70 g (2 1/2 oz) dark chocolate, 70% cocoa, chopped
- 90 g (3 oz) pistachios, shelled and unsalted
- 100 g (3 1/2 oz) maraschino cherries, drained and patted dry
Method
Restated from the original video
- 1
Line a 1.5 l (6 cup) loaf pan with plastic wrap, leaving a 5 cm (2 in) overhang on the long sides.
- 2
Heat the milk in a saucepan until steaming.
- 3
Whisk the yolks and sugar in a bowl for 1 min, until pale. Pour in the hot milk in a thin stream, whisking.
- 4
Return the mixture to the pan and cook over low heat, stirring constantly, until it coats the back of a spoon and reaches 80 °C (175 °F), 5-7 min. Do not let it boil.
- 5
Strain into a bowl, stir in the vanilla and cool over a bowl of ice water for about 15 min, stirring now and then.
- 6
Meanwhile grind 70 g of the pistachios to a fine meal in a food processor. Chop the rest and set aside for serving.
- 7
Melt the chocolate in a heatproof bowl set over barely simmering water. Let it cool slightly.
- 8
Chop 80 g of the cherries and keep the rest for serving.
- 9
Whip the cream to soft peaks, until it just holds its shape.
- 10
Divide the cooled custard among 3 bowls. Stir the melted chocolate into the first, the ground pistachios into the second and the chopped cherries into the third.
- 11
Fold a third of the whipped cream into each bowl, in two additions, until no streaks remain.
- 12
Spread the chocolate layer in the loaf pan and smooth the top. Freeze for 1 hour, until firm to the touch.
- 13
Spread the pistachio layer over it and freeze for 1 hour.
- 14
Spread the cherry layer on top and freeze for at least 4 hours, or overnight.
- 15
To serve, lift the spumoni out by the plastic overhang, turn it onto a platter and peel off the wrap. Let it stand for 5 min.
- 16
Slice with a knife dipped in hot water. Scatter the chopped pistachios and the remaining cherries over the slices.
