Paprika and Garlic Grilled Chicken Breasts

6 ingredients

8 steps

What you need

  • 4 boneless skinless chicken breasts, about 800 g (1 3/4 lb) in total
  • 2 tbsp olive oil, plus a little for the grill
  • 1 tsp salt
  • 1/2 tsp black pepper, freshly ground
  • 1 tsp garlic powder
  • 1 tsp sweet paprika

Method

Restated from the original video

  1. 1

Lay each chicken breast between two sheets of baking paper and pound the thick end with a rolling pin until the whole piece is an even 2 cm (3/4 in) thick.

  2. 2

Mix the salt, pepper, garlic powder and paprika in a small bowl.

  3. 3

Rub the chicken all over with the olive oil, then sprinkle the spice mix evenly on both sides.

  4. 4

Leave it to sit for 10-15 min while the grill heats.

  5. 5

Heat a grill or ridged grill pan to medium-high and wipe the grates with a little olive oil.

  6. 6

Grill the chicken without moving it until it has dark grill marks and lifts away easily, 5-7 min.

  7. 7

Turn and grill until the thickest part reads 74 °C (165 °F) on a thermometer and the juices run clear, 5-7 min.

  8. 8

Rest on a board for 5 min before slicing.

About grilled chicken breast

A boneless chicken breast rubbed with olive oil, garlic powder, and paprika, then grilled over direct heat until the outside chars and the inside stays juicy.

What cooks argue about

The main argument is over pounding the breast to an even thickness before grilling, which cooks it through evenly, against leaving it as is, which chars the edges before the thick center finishes.
