What you need

  • 4 skin-on salmon fillets, about 170 g (6 oz) each
  • 1 lemon
  • 2 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 2 tbsp fresh dill, chopped
  • salt, to taste
  • black pepper, to taste
  • lemon wedges, for serving

Method

Restated from the original video

  1. 1

Heat the oven to 200 °C (400 °F) and line a baking tray with baking paper.

  2. 2

Pat the salmon dry with kitchen paper and lay the fillets skin side down on the tray, leaving a little space between them.

  3. 3

Finely grate the zest of the lemon into a small bowl, then squeeze in its juice.

  4. 4

Stir the olive oil, garlic and most of the dill into the bowl.

  5. 5

Season the fillets with salt and pepper, then spoon the lemon mixture over the tops and spread it evenly.

  6. 6

Bake for 12-15 min, depending on thickness. The fish is ready when it flakes apart easily at the thickest part, and a thermometer in the centre reads about 52 °C (125 °F) for moist fish.

  7. 7

Rest for 3 min, sprinkle with the remaining dill and serve with lemon wedges.

About baked salmon

A salmon fillet roasted with olive oil, lemon, and dill until the flesh turns opaque and flakes apart under a fork.

What cooks argue about

The fight is over doneness: pulling the fish around 125F for a translucent center, or cooking to 145F, where it flakes fully but dries out faster.
