What you need

  • 240 ml (1 cup) whole milk, warmed to 38 °C (100 °F)
  • 7 g (2 1/4 tsp) active dry yeast
  • 100 g (1/2 cup) granulated sugar
  • 500 g (4 cups) all-purpose flour, plus more as needed
  • 85 g (6 tbsp) unsalted butter, softened, for the dough
  • 1 tsp salt
  • 2 large eggs, at room temperature
  • 115 g (1 stick) unsalted butter, very soft, for the filling
  • 200 g (1 cup packed) light brown sugar
  • 2 tbsp ground cinnamon
  • 115 g (4 oz) cream cheese, softened
  • 55 g (4 tbsp) unsalted butter, softened, for the frosting
  • 180 g (1 1/2 cups) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk, for the frosting

Method

Restated from the original video

  1. 1

Stir the yeast and 1 tsp of the granulated sugar into a few spoonfuls of the warm milk. Leave until foamy, about 5 min.

  2. 2

Put the flour, remaining granulated sugar, salt, eggs, 85 g butter, the yeast mixture and the rest of the milk in a stand mixer bowl.

  3. 3

Knead with the dough hook on medium speed until smooth and pulling away from the bowl, 10-12 min. Add flour 1 tbsp at a time only if it stays wet.

  4. 4

Shape into a ball, set it in a buttered bowl, cover and leave in a warm place until doubled, about 1 hour.

  5. 5

    Butter a 23 x 33 cm (9 x 13 in) baking pan.

  6. 6

    Roll the dough out on a floured worktop to a 30 x 45 cm (12 x 18 in) rectangle.

  7. 7

Spread the 115 g soft butter over the dough. Mix the brown sugar and cinnamon and scatter it evenly on top.

  8. 8

Roll up tightly from a long side and pinch the seam closed.

  9. 9

Cut the log into 12 rolls with a sharp knife or a loop of thread and set them in the pan.

  10. 10

Cover and leave until puffy and nearly doubled, 30-45 min. Heat the oven to 175 °C (350 °F) meanwhile.

  11. 11

Bake until golden on top and cooked through at the center, 22-25 min. Cover loosely with foil if they brown too fast.

  12. 12

Beat the cream cheese with the 55 g butter until smooth, then beat in the powdered sugar, vanilla and milk.

  13. 13

Let the rolls cool for 5 min, then spread the frosting over them while warm.

About cinnamon roll

A yeasted dough rolled around butter, cinnamon, and sugar, sliced into spirals and baked soft, usually finished with a sweet glaze or cream cheese icing.

What cooks argue about

Bakers disagree on proofing the dough overnight in the refrigerator for a slower rise and deeper flavor, and on slicing the log with floss instead of a knife to avoid squashing the spiral.
