Method
Restated from the original video
- 1
Peel the horseradish with a vegetable peeler and rinse it. Cut into chunks that fit a food processor.
- 2
Open a window or switch on the extractor fan. The fumes sting the eyes and nose.
- 3
Grate the horseradish on the finest holes of a box grater, or pulse it in a food processor with the water until it forms a coarse paste.
- 4
Stir in the vinegar within a few minutes of grating, since vinegar stops the heat from developing further.
- 5
Add the sugar, salt and the water if it was not already used. Mix well.
- 6
Taste and adjust. It should be sharp and a little salty.
- 7
Pack into a clean jar, close the lid and let it sit for 15 min before serving.
- 8
Keep in the refrigerator for up to 2 weeks. Serve in small spoonfuls alongside cold or boiled meat dishes.
