  • 1/4 tsp ground nutmeg

Method

Restated from the original video

  1. 1

Heat the honey, granulated sugar, water and butter in a saucepan over low heat, stirring until the sugar dissolves and the butter melts. Do not let it boil.

  2. 2

Mix both flours with the cinnamon, ginger, cloves, nutmeg, baking soda and baking powder in a large bowl.

  3. 3

Pour the warm honey mixture over about a third of the dry mix and stir until no dry flour is left. Cool to lukewarm, 15-20 min.

  4. 4

Beat in the egg, then work in the rest of the flour mix to make a firm, soft dough that does not stick to the hands. Add a spoonful of flour if it is tacky.

  5. 5

Heat the oven to 200 °C (400 °F) and line two baking sheets with parchment.

  6. 6

Divide the dough into pieces of 40 g (about 1 1/2 oz) and roll each into a smooth ball.

  7. 7

Set the balls on the sheets 4 cm (1 1/2 in) apart and press each down slightly.

  8. 8

Bake until puffed, cracked and lightly browned underneath, 12-15 min. They stay pale on top.

  9. 9

Cool on a rack completely, about 30 min.

  10. 10

Stir the powdered sugar with the lemon juice and 1-2 tsp water into a thick, pourable glaze.

  11. 11

Brush the glaze over the cooled cakes and leave for 30 min until it dries to a matte shell.
