Method
Restated from the original video
- 1
Wipe the mushrooms clean with a damp cloth. Leave small ones whole and quarter the large ones.
- 2
In a large pot, bring the water to a boil with the salt, vinegar, cloves, allspice, peppercorns, bay leaves and dill.
- 3
Add the mushrooms and cover. Once the marinade returns to a boil, cook 15 min.
- 4
While they cook, toss the onions with the oil in a large bowl.
- 5
Lift the mushrooms out of the pot with a slotted spoon, add them to the onions and mix.
- 6
Pack the mixture into clean glass jars and pour in enough hot marinade to cover completely.
- 7
Seal the jars and let them cool on the counter, then refrigerate. The mushrooms are good once fully cold and better the next day.
- 8
Keep refrigerated and eat within 2 weeks. Serve cold.
