Sunflower Seed Honey Brittle Bars

6 ingredients

8 steps

What you need

  • 250 g (1 3/4 cups) hulled sunflower seeds, raw, unsalted
  • 120 g (1/3 cup) honey
  • 100 g (1/2 cup) granulated sugar
  • 2 tbsp water
  • 1 tsp lemon juice
  • sunflower oil, for greasing

Method

Restated from the original video

  1. 1

Line a baking tray with parchment paper and brush it lightly with oil. Oil a spatula or a small rolling pin as well.

  2. 2

Toast the seeds in a dry, wide frying pan over medium heat, stirring, until golden and fragrant, 4-5 min. Tip them into a bowl straight away so they do not keep browning.

  3. 3

Put the honey, sugar, water and lemon juice in a heavy pan over medium-low heat. Stir until the sugar dissolves, then stop stirring.

  4. 4

Boil the honey mixture until it turns deep amber and a drop sets hard in cold water, 6-8 min (about 150 °C or 300 °F on a sugar thermometer).

  5. 5

Add the seeds and stir for 30 seconds until every seed is coated.

  6. 6

Scrape the mixture onto the tray at once. Press and roll it flat with the oiled spatula to a thickness of about 1 cm (1/2 in).

  7. 7

Wait 5 min, then score the slab with an oiled knife into bars about 3 x 6 cm (1 x 2 1/2 in).

  8. 8

Cool completely, about 30 min, then break along the lines. Store in an airtight container.
