- 1
Rinse the beans and soak them in plenty of cold water for 2 hours. Drain.
- 2
Put the beans in a pot with 500 ml (2 cups) of fresh water. Bring to a boil and cook for 15 min, until about half cooked and the skins just begin to wrinkle.
- 3
Pour off the cooking water until about 200 ml (3/4 cup) remains in the pot with the beans.
- 4
Add the soy sauce, syrup, sugar, garlic and kombu.
- 5
Bring to a boil over high heat, then reduce to low, cover and simmer for 20-25 min, stirring now and then, until the beans are tender but still whole.
- 6
Uncover, raise the heat to high and boil for 2-3 min, stirring, until the sauce is thick and the beans look glossy.
- 7
Turn off the heat and stir in the sesame oil and sesame seeds.
- 8
Let cool, then slice the kombu into thin strips and mix it back in. Serve at room temperature as a side dish with rice.
