Banana Oat Protein Pancakes
10 ingredients
9 steps
What you need
- 80 g (3/4 cup) rolled oats
- 1 banana, ripe, broken into chunks
- 2 large eggs
- 30 g (1 oz) whey protein powder, unflavored or vanilla
- 120 ml (1/2 cup) milk
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1 pinch salt
- 1 tsp neutral oil, for the pan
- 100 g (3/4 cup) mixed berries, for serving
Method
Restated from the original video
- 1
Pulse the oats in a blender for about 20 seconds, until they look like coarse flour.
- 2
Add the banana, eggs, protein powder, milk, baking powder, vanilla extract and salt. Blend until the batter is smooth.
- 3
Let the batter stand for 5 min. It thickens as the oats soak up the milk.
- 4
Brush a non-stick skillet lightly with oil and warm it over a gentle, medium-low flame. Protein powder scorches fast, so keep the heat low.
- 5
Pour in about 60 ml (1/4 cup) of batter for each pancake, leaving room between them.
- 6
Cook until bubbles break on the surface and the edges look set, 2-3 min.
- 7
Flip and cook until golden and cooked through, 1-2 min.
- 8
Repeat with the remaining batter, brushing the pan with more oil when it looks dry.
- 9
Serve warm, topped with the berries.
