- 1
Dust the beef ribs with flour and brown them on all sides until they achieve a golden hue.
- 2
Take out the ribs and put the vegetables into the same cooking vessel.
- 3
Gently cook the vegetables, then incorporate the tomato paste and herbs.
- 4
Introduce the wine and allow the alcohol to cook off.
- 5
Pour in the beef broth, season with salt and pepper, and place the ribs back into the pot.
- 6
Cover the pot and bake in the oven at 160°C for three hours.
- 7
To prepare the accompaniment, stir the polenta into the hot beef broth and cook until it reaches the desired consistency.
- 8
Take off the heat, then mix in the butter and parmesan.
- 9
Once the ribs are done, carefully lift them from the sauce.
- 10
Filter the sauce, skim off any extra fat, and reduce it a bit if needed.
- 11
Present the dish by layering soft polenta, followed by the tender beef rib, and finishing with a drizzle of the concentrated sauce.
