- 300 g pachino tomatoes
- 1 large red onion
- 3 tbsp red wine vinegar
- 20 g fresh basil
- 2 tsp dry oregano
- 70 g green olives
- 2 tsp capers

- 2 tbsp extra virgin olive oil

Slice the red onion into thin rounds and prepare them for pickling.

Place the sliced onions in a bowl, add a small amount of fine sea salt and three tablespoons of red wine vinegar, then gently work the onions to ensure they are well coated.

Thoroughly wash the pachino or cherry tomatoes and halve them. Incorporate the tomatoes into the onion mixture.

Introduce the capers, green olives, fresh basil, and dry oregano to the bowl. Allow these ingredients to marinate for approximately 10 minutes.

Cook the potatoes by boiling until tender, then cool them, remove their skins, and cut them into pieces suitable for eating.
