Method
Restated from the original video
- 1
Warm the milk for the dough to lukewarm, 35 °C (95 °F). Stir in the yeast and 1 tsp of the dough sugar and leave for 10 min until foamy.
- 2
Mix the bread flour, the rest of the dough sugar and the salt in a large bowl. Add the yeast milk, the dough egg and the softened butter.
- 3
Knead for 8-10 min until smooth and elastic. Cover and leave in a warm place until doubled, about 1 hour.
- 4
For the filling, heat the filling milk with the filling sugar and filling butter in a saucepan until the butter melts and the milk steams.
- 5
Stir in the poppy seeds and semolina. Cook over low heat, stirring, until thick, 3-4 min. Take off the heat and let cool for 15 min.
- 6
Stir the vanilla and the filling egg into the cooled poppy mixture.
- 7
For the streusel, rub the all-purpose flour, streusel sugar and cold butter together with your fingertips into coarse crumbs. Chill until needed.
- 8
Heat the oven to 180 °C (350 °F). Grease a 26 cm (10 in) springform pan with the 1 tbsp butter.
- 9
Press the risen dough into the pan, pushing it 2-3 cm (1 in) up the sides. Spread the poppy filling over the top, leaving a 1 cm (1/2 in) rim.
- 10
Scatter the streusel evenly over the filling.
- 11
Bake until the streusel is golden and the edges of the dough are browned, 40-45 min.
- 12
Cool the cake in the pan for at least 1 hour so the filling sets, then release the ring and slice.
