9 ingredients
7 steps
What you need
- 150 g (5 oz) smoked bacon, cut into 1 cm (1/2 in) dice
- 1 tbsp vegetable oil
- 2 medium onions, thinly sliced
- 700 g (1 1/2 lb) white cabbage, cored and shredded
- 1 leaf bay leaf
- 3 whole allspice berries
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground
- 250 g (9 oz) wide egg noodles, long ones broken into 4 cm (1 1/2 in) pieces
Method
Restated from the original video
- 1
Put the bacon in a wide, heavy pot over medium heat. Fry, stirring, until the fat melts out and the edges turn crisp, 6-8 min.
- 2
Add the oil and onions. Cook until soft and golden, 6-8 min.
- 3
Add the cabbage, bay leaf, allspice, salt and pepper. Toss to coat in the fat.
- 4
Cook over medium-high heat, stirring and scraping the bottom often, until the cabbage has shrunk to about a third of its volume and the edges are lightly browned, 20-25 min. If it sticks, add a splash of water.
- 5
Meanwhile, bring a large pot of salted water to a boil. Cook the noodles until al dente, 7-9 min, then drain.
- 6
Fish out the bay leaf and allspice. Add the noodles to the cabbage and toss over low heat for 2 min.
- 7
Taste and adjust the salt and pepper. Serve hot, straight from the pot.
